In Section 13, Shiro had to dull his reactions. The scientists, they wanted perfect little clones to use how they saw fit. No emotions, no sass mouth, no crying. Just unquestioning obedience and sacrifice. Those who didn't fall in line got spirited away in the middle of the night, and Shiro had to try really hard not to think about their screams.
But three days out from constant supervision is enough for his actual personality to start poking through. And in an unsurprising turn, the teenager has a sass mouth. Funny how that works out, huh?
Shiro doesn't trust Stein yet, not really. He's a scientist, just like the others, and even if he had been slightly kinder than everyone else he still has the blood of Shiro's brothers on his hands. For all he knows, this could be a trial of some sort, and he could be back in the lab by morning.
